Parachute and Plain White T's Concert



A lady my mom works with won 2 tickets from MY104.3 to the Plain White T's concert last night at the House of Blues in Downtown Disney. She gave them to my mom, and my mom asked if I wanted to take Emmy. I love this band and Parachute (who opened for them) and so I was excited! We bought a ticket so Joe could go with us and the 3 of us went to the concert. We had a good time, we stood the whole time so we got really sore and tired, but we enjoyed it still. The bands sounded great live, just like their CDs. Joe and I had a great time with Emmy.

Farfalle with Broccoli

So last night I made Farfalle with Broccoli for dinner. It was so good! I left the anchovy's out. I should have put some grilled chicken in it to take the anchovy's place, but I didn't. That is what I would suggest next time. This recipe was super easy and a good way to get my husband to eat veggies.

I wish I would have remembered to take a picture last night, but we were too hungry so it totally slipped my mind! I hope whoever tries this loves it too!


Farfalle with Broccoli

Prep Time: 15 min Cook Time: 20 min Level: Easy Serves: 4 to 6 servings

Ingredients
1 pound farfalle pasta
2 heads broccoli, trimmed to florets (about 4 cups)
1/4 cup extra-virgin olive oil
4 tablespoons butter
3 garlic cloves, chopped
5 anchovy fillets, diced
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup grated Parmesan

Directions
Bring a large pot of salted water to a boil over high
heat. Add the pasta and cook, stirring occasionally. After 5 minutes, add the broccoli florets to the pasta
and stir and cook for another 4 minutes. Drain pasta and broccoli, reserving 1 cup of the pasta water.

Meanwhile, in a large skillet, heat the olive oil and butter over medium heat. Add the garlic, anchovies, and
red pepper flakes and cook for 5 minutes. Add the broccoli, pasta, salt and pepper and toss. Add some of the
reserved pasta water, if necessary, to make a light sauce. Transfer to a serving platter and sprinkle with
Parmesan.
